Dean absolutely loveeeeees carbonara. However, he unfortunately likes the variety you buy in the chilled pastas/sauces section of Woolworths. Naturally, I’m not a fan of that at all so with the help of a couple of family recipes I’ve perfected a super easy, home-made version that would have way less additives and tastes much better. Disclaimer: this is by no means a “healthy” recipe- it’s just less processed and fake than a store brought sauce..

The best part about this recipe is that it is super easy. It’s what we have when we can’t be bothered cooking anything much, and are already starving and wanting something on the table quick. You probably already have most of the ingredients at home, and this should take you about 15- 20 minutes (or as long as your pasta takes to cook).

Much like my last recipe for Lasagne you wont find many measurements in this recipe, judge by your own taste and hunger and it’ll turn out fine.


  • Pasta of your choice
  • Butter (NOT margarine)
  • Onion
  • Bacon
  • Eggs (one per serve eg. 2 people eating, use 2 eggs)
  • Parmesan Cheese
  • Garlic Oil (or just crushed garlic will do fine)
  • Salt
  • Pepper


  1. Place a saucepan over the stove, add a pinch of salt & a dash of olive oil. Bring to the boil.

2. Once your water is boiling add in your pasta. I only had limited amounts of two different pasta types (Spirals & Fettuccini) so I used both.

3. In a frying pan, heat approximately 50g of butter (increase based on how many people you are cooking for), once the butter is melted add in your onion, bacon, garlic oil or crushed garlic and begin to fry.  If you are a fan of mushrooms in carbonara you could add those in here (Dean has the diet of a 6 year old boy and detests most vegetables so we don’t have mushrooms in ours).

4. In a seperate bowl add your eggs, parmesan, salt, & pepper.

5. Check your pasta is al dente (just right) prior to draining the boiling water and rising the pasta under a quick burst of cool tap water. Place your pasta into a bowl or back into the saucepan. Do NOT place your pasta back onto heat.

6. Add your bacon and onion to your egg mix, ensure that you tip all of the butter remaining in the pan into the mix too. Mix the ingredients together with a fork.

7. Add your sauce mix to the pasta (remember, your pasta is NOT on any heat source) and mix through. As you mix through your sauce will coat, and instantly cook due to the heat of the pasta. You will not notice a difference in the look of the sauce, just trust the process.

*Disclaimer: I used to not believe in the process of this and put my pasta back over heat with the sauce to make sure the sauce “cooked”…. it isn’t good, it doesn’t taste as good, don’t do it.*

8. Add salt and pepper to your liking and serve.
